Looking for a quick, flavourful dish that packs a punch? These Spicy Peanut Noodles are the perfect blend of heat, tang, and savoury richness, making them an ideal meal for when you're craving something bold and satisfying. 

The smooth peanut butter pairs beautifully with the zest of lime and the gentle heat of red chili, while fresh spring greens and asparagus add a satisfying crunch. Garnished with crushed peanuts and fresh herbs, every bite is a delightful explosion of flavours. 

Serve with a wedge of lime on the side, and you've got a meal that's as refreshing as it is indulgent.

INGREDIENTS

  • 3 cloves garlic
  • 1 red chilli
  • 4 tbsp smooth peanut butter
  • 3 tbsp lime juice
  • 2.5 tbsp runny honey or maple syrup
  • 2 tbsp tamari
  • 2 tbsp warm water
  • 100g spring greens
  • 6 spring onions
  • 120g asparagus
  • 160g ZENB Noodles (two bundles)
  • splash sesame oil
  • sprinkle crushed peanuts
  • fresh herbs
  • lime wedge

INSTRUCTIONS

In a large bowl mix the garlic, (finely grated), red chilli (deseeded and finely chopped), smooth peanut butter, lime juice, runny honey or maple syrup, tamari and warm water. Whisk together until smooth and set aside.

Finely slice the spring greens and chop the spring onions and asparagus.

Bring a pan of water to the boil and add two bundles of ZENB Noodles. Cook per the packet instructions.

While the noodles are cooking, sauté the vegetable in a wok with a little sesame oil, until cooked through.

Drain and rinse the noodles, then add to the bowl with the sauce. Twirl to coat, then add the veggies and mix.

Split between two bowls and top with chilli crisp, crushed peanuts and fresh herbs (mint and coriander), with a wedge of lime on the side. Enjoy!

Tasty Tips

If you're sensitive to spice or are feeding little ones, skip the addition of the chilli for a delicious peanut noodles dish.

Using tamari ensures this dish is gluten free. If you don't have tamari, simply swap this for soy sauce.
