Smoky and Spicy Tofu

Tofu is a great source of plant based protein, made from soybeans. This recipe adds spicy and smoky flavours to the tofu to create a flavoursome vegan main meal.
INGREDIENTS
- 450g Firm Tofu, cut into 2x2 cm cubes
- 2 tbsp coconut oil
- 1 tsp smoked paprika
- 1 sprig rosemary, finely chopped
- ½ - 1 tsp chilli flakes
- 1 packet ZENB Mushroom & sweet corn grains
- Salad leaves
- 1 lime, zest and juice
- 1-2 tsp olive oil (as needed)
INSTRUCTIONS
1.Heat a frying pan on a medium heat with the coconut oil and, once hot, add the cubes of tofu and cook turning regularly until golden on each side, this will take 6-10 minutes. At then add of this time add the smoked paprika, chopped rosemary, chilli flakes and salt and cook for a further 2 minutes tossing the tofu in the spices.
2.Cook the ZENB grains as on the packet instructions.
3.Serve the hot grains, with the cooked tofu topped with salads, lime zest and juice, extra salt and a drizzle of oil.
