Prawn, Harissa Pasta by Sarah's Healthy Kitchen

Created by Sarah (@sarahshealthykitchen) this prawn and harissa pasta is a light and delicious dish perfect for a summer garden get together.
- 170g ZENB Fusilli
- 1 tsp olive oil
- 1 garlic clove, minced
- 1 x 400g tin chopped tomatoes
- 1 tbsp harissa paste
- 1 tsp honey
- 150g cooked and peeled king prawns
- Handful of fresh basil leaves
- 3 tbsp natural yoghurt, to serve
- Pinch of chilli flakes, to serve
Place a pan of salted water onto boil, add the pasta and simmer for 10 minutes until al dente, then drain and set aside.2.
Add the olive oil to a large saucepan over a medium heat, add the garlic and fry for 1-2 minutes. Stir in the tomatoes and harissa paste and simmer for 15 minutes to thicken.3.
Once thickened, stir through the honey, prawns, cooked pasta and chopped basil, season well then serve in pasta bowls with a drizzle of natural yoghurt and chilli flakes.
Give your ZENB pasta a light wash after cooking to maximise the flavour.
