This creative and oh-so-tasty pasta salad sits inside a Jack-O'-Lantern-shaped bell pepper. It’s sure to impress even the most discerning ghosts and ghouls at your Halloween get-togethers.
INGREDIENTS
- 160g ZENB Pasta Penne
- 3 tbsp extra-virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 large courgette, halved lengthways, cut into ½-inch thick slices
- 1 large red onion, chopped
- 300g cherry tomatoes, halved
- 1 large handful fresh parsley
- 2 whole bell peppers
INSTRUCTIONS
1.Pre-heat your oven to 200C.
2.Cook the ZENB pasta as instructed. Rinse the cooked pasta in cold water and leave to drain.
3.Roast the courgette and onion in the oven for 20 minutes. Remove and leave to cool.
4.Make the dressing by whisking together the olive oil, red wine vinegar, oregano and garlic powder.
5.Mix the dressing, pasta, roasted veg, tomatoes and parsley in a bowl and season to taste.
6.Slice the top of the bell peppers and remove all of the seeds from inside. Cut out Jack-O’-Lantern faces from the side of the pepper.
7.Fill the peppers with the pasta salad. Serve and enjoy!
