Craving a comforting, hearty meal that’s easy to make and full of flavour? This One-Pot Tomato Penne with Mozzarella Balls is the perfect answer. In just 25 minutes, you can create a deliciously rich and satisfying dish, all in one pot, making cleanup a breeze. 

The combination of tender penne, juicy tomatoes, and melty mozzarella balls creates a luscious texture that’s enhanced by the sweet-sautéed peppers and fresh spinach.

Topped with a sprinkle of Parmesan and fragrant basil, this dish is ideal for a cozy dinner for two. Serve it up with a dollop of green pesto for an extra burst of flavour.

INGREDIENTS

  • 160g ZENB pasta Penne
  • 2 tbsp extra virgin olive oil
  • 1 large red onion, finely chopped
  • 4 cloves garlic, crushed
  • 2 yellow or red peppers, finely sliced
  • 100g baby spinach
  • 400g tin chopped or cherry tomatoes
  • 400ml hot water
  • 1 tablespoon tomato puree
  • 100g Mozzarella or Mozzarella balls
  • 1 handful of torn basil leaves
  • Sea salt and pepper
  • 20g Parmesan cheese, grated
  • 1 tablespoon green pesto

INSTRUCTIONS

In a one-pot pan with a lid, sauté the onions for around 5 minutes, on a medium heat before adding the garlic. Cook for 2 more minutes.

Finely slice the peppers into strips and add to the onions, sauté for a further 3-4 minutes.

Next all the tomatoes, water, pasta, tomato puree and stir though. Heat to a simmer and then cover with a lid and reduce the heat to a medium heat.

Cook for 12 minutes, stirring half way through cooking. Check that the pasta is all dente (otherwise cook a little longer). Season with salt and pepper.

Stir through the spinach, and add the torn basil.

6.

Add the chopped Mozzarella or Mozzarella balls and Parmesan and serve.

Tasty Tips

This dish also works well with our Agile, just add the pasta 2 minutes before serving!

This dish is easy to make vegan. Just replace the mozzarella balls with a vegan alternative.
